Parsnip Honey Bread
Oh yes! A delicious and delicate quick bread made with parsnips and honey.
INGREDIENTS
  • 1/2 cup vegetable or olive oil
  • 1/2 cup honey*
  • 2 eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 1 1/2 cups grated parsnips
  • 1 1/2 cups AP flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup walnuts, roughly chopped
*for a less sweet bread, reduce honey to 1/4 cup and add 1/4 cup water. baking time will increase slightly.
METHOD
  1. Preheat the oven to 350F. Grease a 9 inch loaf pan with oil and set aside.
  2. Whisk together the oil, honey, eggs and vanilla. Add the grated parsnips and set aside.
  3. In a large bowl whisk together the flour, baking powder, baking soda, salt and spices.
  4. Add the wet ingredients to the dry ingredients and stir until evenly mixed. Fold in the walnuts and pour the batter into the prepared loaf pan.
  5. Bake in the preheated oven for 45-55 minutes or until a toothpick comes out clean when inserted in the center.
  6. Cool for 15 minutes, then turn out of loaf pan and enjoy!
