Beet & Feta Pasta
Bright and flavorful beet pasta, topped with feta and dill.
  • 1lb pasta
  • 8oz feta
  • 3/4 oz fresh dill (optional)
  • 1 tbsp lemon juice
  • 1lb beet puree
  • 4 Tbs. olive oil
  • 1 tsp fine salt
  • 4 garlic cloves, finely chopped
  • red pepper flakes
  1. Cook pasta. While pasta is cooking, combine beet puree, olive oil, salt, garlic, and red pepper flakes.
  2. Drain pasta and toss with beet sauce, adding little by little. 
  3. Top with feta, dill, and lemon juice. Enjoy!
